Anyway, I think I'm going to stick with being a Squirtle. Why? I just had to do a rescue mission.... TO SAVE A SWAMPERT!!! XD
That's awsome! A fully-evolved Swampert had to be saved by a little Squirtle! XD This was a code mission, so it was much more difficult than a normal-game based mission. (waits for Thank-you mail)

So it's one of those 'the bigger there are, the harder they fall' thing, right? Anyway, I'm sticking with with my plan of waiting until Lv. 65-75 ordeal.

After reviewing the Pok?Dex section i noticed that squirtle's and blastoise's stats ARE EXACTLY THE SAME. So, until you completly grow your Pokémon (to where it has learned all the moves it can) I would suggest to keep it a squirtle. For Squirtle that would be lvl 47 with the learn of hydro pump, wartortle at 53 with hyrdo pump, but for Blastoise it's a special case. He learns hydro pump at lvl 68 and he learns the most powerful water type move at lvl 99 - Hydro Cannon. I suggest to keep it a squirtle until lvl 99 (or after he fully grows and you want him to be cooler) when he learns hydro cannon.
Hint-If you evolve your Pokémon and he doesn't learn any moves when he is supposed to (like when magikarp evolves to Gyrados and it learns Bite), have no fear, Gulpin is here! Just stop on by and Gulpin will teach any moves that the specific Pokémon was supposed to learn considering if it stayed that evolved form since it hatched. Please note that if you forget a TM move then Gulpin cannot reteach it.
EDIT: The same is true for Charizard. Charizard does have the same stats as charmander/charmelon, so its better to keep it at a lower evolution so learn moves faster. The most powerful fire move in the game, Blast Burn, is learned by only Charizard in the evolutionary family at level 99.

No, you can evolve as many Pokémon as you want.

Because I wouldn't feel like it was "me" anymore if I evolved to Blastoise. It would have a diffrent feel... but hey! I'll recruit a new Squirtle and have HIM evolve, keeping me the good ol' R.S.! n_n

No. They stay at the same level. And The R.S. is right. You can eveolve them on any level as long as the Pokémon has the requirement.
